Main Ingredients:
- 1 medium to large onion
- ½ C water
- 1 can black beans
- 2 T apple cider vinegar
Spices:
- 1 clove of garlic, minced
- ¼ - ½ t cumin
- t cayenne pepper
- black pepper, pinch
Toppings:
- 1 tomato, cubed
- 1 avocado, peeled and cubed
METHOD
- Cut onion into rings
- Place in pan, add ½ C water, stir and cover.
- Strain and rinse black beans.
- Mash, food process, or blend beans into a puree
- Add apple cider vinegar and mix.
- Add spices and mix.
- Add bean mixture to onion mixture and mix.
- Remove from heat and cover.
- Prepare toppings.
- Use a leaf of lettuce or tortillas to wrap up the
bean & topping goodness!
