- 1 large onion (200g)
- 5 carrots (500g)
- 1 sweet potato (400g)
- 2 tablespoons olive oil
- 1 cup natural soy milk
- 4 cup vegetable broth
- 2 tablespoons fresh dill (or 2t dried)
Finely dice onion, carrots and peeled sweet
potato.
On medium to high heat, saute vegetables in oil
until onions are browned. (About 10 minutes.)
Transfer vegetables into large pot.
Add soymilk, and vegetable broth, stir well.
Cook on medium heat, until sweet potatoes can
be easily pierced with a fork. (About 10 minutes.)
