Lemon Frosting
- 2 cups confectioner’s sugar
- 1/4 cup (1/2 stick) margarine, softened
- 2 Tbsp. soy milk
- Juice and grated rind of one lemon

With an electric mixer set at low speed, cream the sugar and margarine. Beat in the soy milk and lemon juice. Stir in the lemon rind. Preparation time: 20 minutes
