Prune Pudding Serves 3-4
- 1 cup prunes
- 1 cup water
- 1/3 cup soymilk or rice milk
- 3 tablespoons carob powder
- 2 tablespoons maple syrup

Place prunes and water in a covered saucepan and simmer until tender, about 20 minutes. Allow to cool slightly, then transfer the prunes and any remaining liquid to a blender.
