Prune Pudding

Serves 3-4

  • 1 cup prunes
  • 1 cup water
  • 1/3 cup soymilk or rice milk
  • 3 tablespoons carob powder
  • 2 tablespoons maple syrup

Place prunes and water in a covered saucepan and simmer until tender, about 20 minutes.

Allow to cool slightly, then transfer the prunes and any remaining liquid to a blender.

Add remaining ingredients and blend until completely smooth.

Spoon into small serving dishes and chill for at least 1 hour.
