Chipotle Split-Pea Soup
- 2 cups dried split peas
- 8 cups boiling water
- 1 medium-sized onion
- chopped 2 cloves garlic
- minced 2 carrots, sliced diagonally
- 1/2 cup chopped parsley
- 1 tsp. chipotle, finely cut, to taste
- 1 Tbsp. low-sodium soy sauce

Simmer the split peas in boiling water until soft, about 1 hour. Add the remaining ingredients and continue cooking until the vegetables are tender, adding more water as needed.
