Crispy Tofu Cakes
- firm tofu
- pesto
- lemon juice
- paprika
- sesame seeds
- salt & pepper
- toppings (whichever marinated veggies you like)
- vegan parmesan (for crunchy covering)

First, blend tofu in a blender- and add all the ingredients listed under flavoring. Blend until smooth. Then pour the mixture into an ice cube tray and to each tofu cube add a topping. Freeze (the cubes are usually ready for frying in an hour). When the cubes are hard, use a nonstick frying pan and sprinkle about two square inches of vegan parmesan on it. Wait until the parmesan turns golden brown and then roll a tofu cube in it until well coated. |
