Taco Soup from the Pantry
- two cans beans of your choice (try two different kinds)
- one can diced or stewed tomatoes
- 1/2 cup chopped yellow onion
- 2 tablespoons taco seasoning
- cilantro
- 1 1/2 cups water
- vegan cheese
- vegan sour cream (e.g. Tofutti Sour Supreme)
- corn chips

Combine beans, tomatoes, onion, taco seasoning, cilantro, and water in a pot. Bring to a boil and simmer for 20 minutes. Garnish with vegan cheese, sour cream, or tortilla chips. Serves 4-6 |
