Veggie Reuben

The veggie version of the popular sandwich.

  • 1 1/2 cups finely shredded cabbage
  • 1/3 cup very thinly sliced onions
  • 1/3 cup sweet red pepper, cut into matchstick-size pieces
  • 1 tablespoon lemon juice
  • 4 slices rye bread
  • 2 oz. soy cheese, sliced or shredded (1/2 cup shredded)
  • Dressing:
  • 2 teaspoons soy mayonnaise
  • 2 teaspoons ketchup
  • 1 teaspoon sweet pickle relish
  • pinch of garlic powder
  • pinch of pepper

Lightly oil a large, nonstick skillet, or spray with nonstick cooking spray. Heat over medium heat. Add the cabbage, onions, red pepper, and lemon juice. Cook, stirring, until the vegetables are tender, about 5 minutes. Add small amounts of water, if necessary, to prevent sticking.

Divide the mixture evenly and pile onto 2 slices of the bread. Divide the cheese and place over vegetables.

Combine the dressing ingredients in a small bowl. Spread the dressing on the remaining bread slices; assemble the sandwiches.
