Veggie Reuben The veggie version of the popular sandwich.
- 1 1/2 cups finely shredded cabbage
- 1/3 cup very thinly sliced onions
- 1/3 cup sweet red pepper, cut into matchstick-size pieces
- 1 tablespoon lemon juice
- 4 slices rye bread
- 2 oz. soy cheese, sliced or shredded (1/2 cup shredded)
- Dressing:
- 2 teaspoons soy mayonnaise
- 2 teaspoons ketchup
- 1 teaspoon sweet pickle relish
- pinch of garlic powder
- pinch of pepper

Lightly oil a large, nonstick skillet, or spray with nonstick cooking spray. Heat over medium heat. Add the cabbage, onions, red pepper, and lemon juice. Cook, stirring, until the vegetables are tender, about 5 minutes. Add small amounts of water, if necessary, to prevent sticking. Divide the mixture evenly and pile onto 2 slices of the bread. Divide the cheese and place over vegetables. Combine the dressing ingredients in a small bowl. Spread the dressing on the remaining bread slices; assemble the sandwiches.
