Tomato Eggplant Bake
- 2 tablespoons oil
- 1 small eggplant, peeled and cut into small pieces
- 1 can stewed tomatoes
- 1 onion, chopped finely
- 1 green pepper, chopped finely

Place eggplant, tomatoes, onion, and green pepper in oiled baking dish. Cover with vegan cheese or nutritional yeast if desired. Bake at 350°F for 20 minutes or until done. |
