Tofu "Egg" Salad
- 1 pound tofu, crumbled
- 1 stalk celery, chopped finely
- 1 carrot, chopped finely
- 3 tablespoons sweet relish
- vegan mayonaise (e.g. Vegenaise or Nayonaise)
- pepper, salt, and dill weed to taste

Mix all ingredients in a bowl and serve alone or on toast with lettuce or sprouts. |
