Messy Mikes (Sloppy Joes)

  • 1 tablespoon olive or canola oil
  • 1 medium onion, diced
  • 1 8-oz package tempeh, crumbled
  • 2 tablespoons tamari or soy sauce
  • 1/2 cup ketchup
  • 1 teaspoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon sugar or other sweetener
  • 1 package burger buns

Heat the oil in a 2-quart saucepan over medium-high. Add onion, tempeh, and soy sauce, and sauté until onion is tender and lightly browned, about 10 minutes.

Add the remaining ingredients, and mix well. Reduce the heat to medium and simmer the mixture uncovered, stirring often, for 10 minutes. Serve over burger buns.
