Idli

  • 1 cup urad dal
  • 3 cups boiled rice
  • Salt, to taste
  • Oil for greasing

Wash the rice and urad dal separately and soak them separately for 8 to 10 hours. Then grind the rice and dal separately into a very fine paste. Mix the two together and add salt and let it ferment for a further 8 to 10 hours.

Once the batter rises, it is ready for steaming. Grease the idli cups with oil and fill them full with the batter. Steam for 10 minutes.
