If you’re like most Americans, you were raised on a diet heavy in animal products but devoid of fresh veggies, whole grains, and legumes.
For many people this can make the transition to a vegan diet a bit more daunting. Luckily, there are tons of delicious vegan foods, including vegan versions of your favorite animal products!
We sat down with MFA staffer Disney Bolin to get her take:
So… Disney, how did you learn to like veggies?
Like most people, I was raised eating meat, dairy, and eggs. A regular dinner would consist of a piece of meat, a potato, and either canned corn or canned green beans. I never really thought much about food, about how it tasted, about what I should be eating, or if there were other options out there. It just wasn't in my scope of knowledge or availability.Shortly after leaving home as a freshman in college, I had the shocking realization that meat, dairy, and eggs contributed to horrendous suffering of animals on factory farms. I knew that I did not want to contribute to this industry just because it was convenient, and I felt ridiculous and sad for not coming to this conclusion sooner. Swearing off meat in that moment, I had to completely reinvent my diet.After some quick internet research, I learned that I wasn't alone on this journey and that starting off with some store-bought vegan meats and frozen vegetables that I could sauté or bake would be a good and easy first step.I couldn't believe that the frozen Gardein chicken fingers and frozen Amy's meals were vegan. They were so easy and they tasted great! I also learned that there were a lot of accidentally vegan foods like Oreos and Lorna Doone cookies, which made it really easy to find a quick snack no matter where I was.As new foods were being incorporated into my diet, my palate was expanding, and suddenly I loved broccoli, kale, carrots, fresh corn, spinach, and more. I was eating more salads, more vegetables, and I immediately lost weight, and had better skin and more energy!And this is coming from someone who did not love veggies to begin with!
