Nutritional Yeast
Nutritional yeast is a cheesy tasting inactive yeast that is very high in B vitamins and protein. It is similar to brewer's yeast, but nutritional yeast tastes much better.
You can often find it in the bulk food bins in health food stores. The most popular brand of nutritional yeast is Red Start Vegetarian Support formula because it is fortified with B12.
Nutritional yeast is popular among vegans as a low-fat way to add a "cheese" flavor to a dish. There are other cheese substitutes as well, such as soy cheese, but nutritional yeast is probably the most nutritious and the lowest in fat.
Preparation:
Typically, the nutritional yeast is just mixed into sauces, soups, dips, etc. whenever you want a cheesy taste. It can also be sprinkled on top of a dish before serving.
