Seitan

Seitan, also known as wheat gluten, is a high protein meat alternative made from wheat. It is believed to have originated in ancient China, and was used as a meat substitute for Buddhist monks.

It is made by taking wheat flour and then washing away the starch. This leaves a chewy high-protein subtance which has a texture similar to meat.

Preparation:

Seitan can be used as you would meat. Add it to a stir-fry, or saute it in a little bit of oil or sauce and put it in a sandwich or taco. Seitan combined with barbeque sauce also makes a great barbeque sandwich.
