These Grilled Stuffed Avocados Are the Perfect End-of-Summer Recipe

Summer is coming to a close, but don’t worry—there’s still time to make this mouthwatering recipe for stuffed avocados!
These bad boys are grilled to perfection, then stuffed with black beans, corn, pico de gallo, crumbled vegan cheese, and cilantro for a fresh, flavorful snack!

Ingredients:

2 to 3 ripe avocados
1 can black beans, drained
1/2 can corn, drained
1 to 2 tbsp. garlic and herb seasoning Ready-made salsa or pico de gallo Vegan block cheese, crumbled (we used Follow Your Heart Vegan Gourmet Monterey Jack)
Fresh cilantro

Directions:
Sear halved avocados on grill, 3 to 4 minutes each side. You can scoop out a bit of the avocado if you’d like to add more filling.
In a saucepan or skillet, warm black beans, corn, and garlic and herb seasoning.
Once avocados are thoroughly warmed (and have beautiful grill lines), fill with beans and corn. Top with pico de gallo, crumbled vegan cheese, and fresh cilantro. Serve!
