Tofu
Tofu, also known as "bean curd",is a Chinese food made by coagulating soy milk, and then pressing the resulting curds into blocks. This process is similar to the way cheese is produced from milk.
The resulting product is a high-protein, high-iron food that can be used in an incredible variety of dishes.
Preparation:
Tofu by itself has very little flavor, but it very good at absorbing the flavors of the other foods it is cooked with. It can also be marinated.
Common Varieties
-- Regular tofu, Firm Tofu. This is the most common type of tofu. It is firmer than soft tofu,
-- Soft or "Silken" Tofu. This type of tofu is very soft and creamy, with a consistency similar to custard. This type of tofu is particlarly good for creamy deserts such as Chocolate mousse or to be used in a smoothie. In the United States, soft tofu is usually sold in air-tight packages that don't need to be refrigerated until opened.
